Where to drink this weekend in Bengaluru: hefeweizen
Hefeweizen is the beer most Indian brewpubs open with. Bengaluru has a long list of them. We picked six across the city, named the beers to ask for and built a short evening around two that share a neighbourhood.
Hefeweizen suits a warm Bengaluru Friday
Hefe means yeast and weizen means wheat. At least half the grist is wheat malt and the beer is served with its yeast still in it, so it pours cloudy under a tall white head. Every bit of fruit and spice in the glass comes from a Bavarian yeast strain. Nothing is added.
That yeast makes two compounds you will smell straight away. Isoamyl acetate reads as banana. 4-vinyl guaiacol reads as clove. On the brewhouse floor the balance is set by fermentation temperature and pitching rate: ferment warmer with less yeast and banana wins, ferment cooler and clove comes forward. A good hefeweizen has both, over soft bread from the wheat and almost no hop bitterness.
It is low in bitterness, soft and fruity, which is why it handles a 35 °C afternoon so well. Ask for it at 4 to 7 °C in a weizen glass, the tall curved one built to hold that head. Freshness matters more here than with most styles, because the banana and clove fade within weeks. Our German hefeweizen style page has the full profile.
Six brewpubs pour one, from Indiranagar to Nagawara
All six are listed as open in our brewery directory, which we last checked in September 2026. Taps rotate, so call ahead before you set off.
- Toit, Indiranagar. Open since 2010, with a straight Hefeweizen on the list. Basmati Blonde and Nitro Stout are there for anyone in your group who wants something else.
- Chin Lung Brewery, Indiranagar. Its hefeweizen is Temple Haze. The same list carries a Guava Chilli Gose and Brown Mundae.
- Arbor Brewing Company, Ashok Nagar / MG Road. Open since 2012. The hefeweizen here is Bangalore Bliss, next to Beach Shack IPA and a Mango Maibock.
- Biergarten Brewery & Kitchen, Koramangala, Whitefield, Bellandur and Manyata / Nagawara. Four outlets with two wheat beers on the list: Oopsie Daisy and a Mango Weizen. A Belgian Blond Ale is also on the list.
- Geist Brewing Co., Hennur / Thanisandra. Two to ask for, Geist Weiss Guy and Geist Uncle Dunkel. Geist James Blond and Geist Kamacitra are on the same list. The group also runs a taproom in Rajajinagar at Orion Mall, Brigade Gateway.
- ICB Indian Craft Brewery, Nagawara. Opened in December 2024. Ask for Happyweizen, then try Wit Maga or Rowdy Stout.
Line up two of these and they will not taste the same. One may lean towards banana, the other towards clove, one may finish drier. Noticing the difference is easy. Naming it and knowing what the brewer did to get there takes practice with someone who has made the beer. That is a different skill from drinking more of it.
Butter chicken and vada pav both work with it
Hefeweizen is soft, fizzy and gentle on bitterness, so it gets along with food that would flatten a hoppy beer.
- Butter chicken. The gravy is mild, creamy and built on tomato. Banana esters and soft wheat sit comfortably beside it. The carbonation clears the butter off your palate between mouthfuls.
- Vada pav. Garlic chutney finds the clove in the beer. The bubbles deal with the fried batter so the next bite tastes as good as the first.
- Malabar parotta with vegetable stew. Coconut milk, whole spice and flaky layers match the beer's soft body. The gentle spice in the stew lines up with the gentle spice in the glass.
Treat these as starting points rather than rules. If the brewpub menu has none of them, look for something creamy, mildly spiced or fried.
Indiranagar gives you the easiest evening
Toit and Chin Lung are both in Indiranagar, so you can taste two hefeweizens without crossing the city. Start at one with a taster of the hefeweizen and something to eat. Move to the other and order the same. Two small pours side by side teach you more than one large glass ever will.
Prefer one stop? Biergarten has four outlets and two wheat beers, so whichever of Koramangala, Whitefield, Bellandur or Manyata is closest to you, you can compare Oopsie Daisy with the Mango Weizen under one roof.
Keep a glass of water going between beers. Take a cab or the metro home. If anyone in your group is driving, they are on the soft drinks for the night: never drive after drinking.
Start with the style page
Before Friday, open the hefeweizen style page and read the aroma notes, then take them with you. Our guide on how to taste beer covers what to do once the glass is in front of you. If you want more dishes than the three above, Indian food and beer pairing goes further.
Common questions
What does hefeweizen taste like?
Banana and clove from the Bavarian yeast, soft bread from the wheat and almost no hop bitterness. It pours cloudy with a tall white head.
What temperature should hefeweizen be served at?
Around 4 to 7 °C, in a tall weizen glass that holds the head.
Why does fresh hefeweizen matter?
The banana and clove aromas fade within a few weeks, faster in heat. On tap at the brewpub that made it is the safest way to get it fresh.
