Where to drink this weekend in Hyderabad: hefeweizen
Hefeweizen is a beer where the yeast does the talking. Three Jubilee Hills brewpubs list one, with more around the city worth a phone call first.
Hefeweizen is a yeast beer first
Hefe means yeast and weizen means wheat, which describes the beer exactly. At least half the grist is wheat malt. The beer is served with its yeast still in it, so it pours cloudy under a tall white head. All the fruit and spice you smell comes from a Bavarian yeast strain. Nothing is added.
Expect banana and clove over soft bread, with a light lemony edge and almost no hop bitterness. The body is medium light and the bubbles are lively. Our German hefeweizen style page has the full profile. The hefeweizen guide goes deeper into how it is brewed.
Serve it at 4 to 7 °C in a weizen glass, the tall, curved one that gives the head room to sit. December evenings in Hyderabad are cooler, which suits a beer you can sip slowly with dinner.
Jubilee Hills holds the confirmed wheat beers
Beer lists come from our brewery directory, last checked September 2026. Taps rotate, so call ahead before you set out. The first three below are confirmed as open in our directory. The other three are listed but not yet confirmed as trading, so treat the phone call as essential.
- Zero40 Brewing, Jubilee Hills. Blue Camel Hefeweizen. Zero40 opened in 2016 and also lists Old Timer Witbier, a handy comparison with a different wheat beer.
- Zythum Brewing Co., Jubilee Hills. Hefeweizen, alongside a Czech Pilsner and a Chocolate Stout.
- Vault Brewery, Jubilee Hills. House Wheat Beer. A Bock and a NIPA are also on the list.
- Ironhill Hyderabad, Kukatpally. Wonderland & Wheat. Part of Ironhill India and opened in 2017, it also lists Sinnerman Stout and L.O.S.T. Lager.
- Onegolf Brewery, Nanakramguda. Hefeweizen.
- Beer House, HITEC City. House Hefeweizen.
Where a list says house wheat beer, ask whether it is the Bavarian kind with banana and clove. Some brewers use the name for other wheat styles. If the person behind the bar is not sure, a taster will settle it in one sniff: banana and clove means you are in the right place.
Banana or clove is decided in the fermenter
The yeast makes two compounds that define the style. Isoamyl acetate smells of banana. 4-vinyl guaiacol smells of clove. The brewer steers the balance through fermentation temperature and pitching rate, the amount of yeast added to the wort. Warmer and lighter on yeast pushes banana. Cooler pushes clove. A good hefeweizen has both.
That makes a Jubilee Hills crawl a neat experiment. Three brewers, one style, three different balances. Smell each before you sip and decide which leans banana and which leans clove. Freshness matters too: those esters fade within weeks, so draught at the brewery is the beer at its best. Most drinkers can tell two hefes apart. Saying why is the harder part. Our tasting guide helps.
What to eat with a hefeweizen
Low bitterness and plenty of fizz make hefeweizen gentle with Indian food. Three to try:
- Butter chicken. Soft wheat and banana sit comfortably with a mild, creamy tomato gravy. The bubbles clear the butter from your palate between bites.
- Malabar parotta with vegetable stew. Coconut milk, whole spices and flaky layers match the beer's soft body and its gentle clove spice.
- Banana sheera. Semolina, ghee and ripe banana line up with the banana the yeast already gives you. Keep it to a small bowl and a small pour.
For the reasoning behind these, read our guide to Indian food and beer pairing.
Plan the evening in one neighbourhood
Zero40, Zythum and Vault are all listed in Jubilee Hills, so you can taste three hefeweizens without crossing the city. Pick two. Try all three only if you keep the pours small. Start with the lightest looking glass and finish on the one with the most clove, since spice lingers on the palate longer than fruit.
Ask for tasters rather than full glasses. Have water with every round and eat something at each stop. Take a cab or the metro home. Never drive after drinking.
Start with the style page
Open the German hefeweizen style page and read the aroma notes before you leave. Then call your first stop, check the wheat beer is pouring and go and find out whether you are a banana or a clove person.
Common questions
What temperature should hefeweizen be served at?
Serve it at 4 to 7 °C. Colder than that and the banana and clove aromas are hard to pick up.
Why is hefeweizen cloudy?
It is served with its yeast still in suspension. The haze is part of the style, not a fault.
Are these Hyderabad brewpubs open this weekend?
Three are confirmed as open in our directory and three are not yet confirmed. Taps rotate everywhere, so call before you go.
