Starting a beer and food delivery kitchen next to a brewpub
A delivery kitchen beside a brewpub can add sales from the same premises. It needs its own menu, its own packaging and its own maths. Here is how to test the idea before you invest.
Why consider a delivery kitchen
A brewpub kitchen is busy in the evening and quiet in the afternoon. A delivery kitchen can fill that gap, reach customers who will not visit and spread rent and equipment over more sales. It also builds an audience that may later visit the pub.
The risk is distraction. A kitchen that serves dine-in guests and a stream of app orders at the same time can slow down both. Decide which service comes first at 8 pm on a Saturday.
The alcohol question
Food delivery and alcohol delivery are different matters. Alcohol delivery is permitted in a few states under conditions and not in others. Rules have changed several times, so check the current notification for your state and your licence before you plan beer for the app. Many brewpubs deliver food only and promote the pub for the beer.
Food needs its own licence or registration under the national food safety authority, FSSAI. Local approvals apply as well. Our guide to passing a food safety audit in a brewpub kitchen covers what inspectors look for.
Design a delivery menu
Not every dish travels. Fries go soft, soup spills and a pint-sized portion of anything with foam is hopeless. Pick dishes that stay hot and keep their texture for 30 minutes in a bag: curries, biryani, rolls, burgers with sturdy buns, grilled meats and bowls. Keep the menu short, since each item adds prep, stock and error.
Beer can appear in the food, not the bag. A beer-brined chicken or a stout gravy gives the kitchen a link to the pub. Our guide to brewpub menu design and margins covers the dine-in side of the same question.
Work out the unit economics
Take one order. Here is an illustration with made up numbers. The customer pays ₹450 before tax. The delivery app takes a commission, assumed here at 25%, which is ₹112.50. Food cost is 35%, or ₹157.50. Packaging is ₹25. What remains is ₹450 minus ₹112.50 minus ₹157.50 minus ₹25, which is ₹155.
That ₹155 has to pay for kitchen labour, gas, rent share, wastage, marketing and discounts. If the app also asks you to fund offers, the figure shrinks. Check the real commission, fees and promotion charges on your own contract. Our guide to table booking and delivery apps and what they cost a brewpub goes through them line by line.
Packaging and the brand
Packaging is a hidden cost and the customer's first impression. Use boxes that vent steam, containers that seal and a printed sticker or card with your pub's name. Add a small insert that says where to find the beer. A good bag from a brewpub should look like it came from a brewpub, not an anonymous kitchen.
Operations: kitchen flow, riders and peaks
Decide who prepares delivery orders. A separate station, even a small one, keeps tickets from mixing. Agree a handover point for riders so they do not crowd the bar. Set a cut-off for the app when the kitchen is full, or you will lose reviews. Track average prep time and the share of orders that arrive late, since both feed app ranking.
Staffing the rush and protecting ratings
Delivery orders arrive in bursts, often at the same time as dine-in covers. Plan the extra hands before you open the app, not after the first bad night. One person on packing and handover frees the cooks. Keep a simple shift plan and review it weekly against order counts. Staff who feel the new channel has made their evening harder will stop caring about it fast.
App ranking depends on ratings, late orders and cancellations. A cluster of cold-food reviews pushes you down the list. The lost visibility costs real sales. Read every review in the first month. Reply politely, fix what is fixable and note patterns, such as a dish that always arrives soggy. Drop it from the menu if you cannot fix it.
Test before you invest
Run a four week trial with the existing kitchen on two evenings a week. Record orders, prep time, complaints and the margin per order after commission. Compare with the margin on a dine-in table in the same hours. If the trial leaves you with a healthy contribution and a calm kitchen, extend it. If not, you have learned cheaply.
Costing a channel, reading its contribution and deciding where to put capital are the skills our Brewery Business Management course teaches for brewery and brewpub owners.
Common questions
Can a brewpub deliver beer through apps in India?
It depends on the state and the licence. Alcohol delivery is allowed in some places under conditions and not in others. Check the current notification.
What dishes travel best in delivery?
Curries, biryani, rolls, sturdy burgers and bowls hold heat and texture. Fried items and foamy drinks travel poorly.
How do I know if a delivery kitchen pays?
Work out the margin per order after commission, food cost and packaging, then subtract labour and rent share. Run a short trial before you invest.
