El Dorado hops for candied fruit in a hazy pale ale

El Dorado is an American hop with high alpha acid and a sweet, candied fruit aroma. It suits hazy pale ales when you add it late and cold. We cover the numbers, a 20 litre recipe and the mistakes that dull it.

What El Dorado is

El Dorado is an American hop from the Yakima Valley in Washington, released around 2010. It is a high alpha variety, usually quoted at 14 to 16%, so it can bitter a beer. Most brewers use it for aroma instead. The aroma is tropical and sweet: pineapple, pear, stone fruit and watermelon, with a boiled-sweet note that tasters sometimes call candy.

Treat the descriptions as a guide, not a promise. Crop year, soil and storage all shift the balance. Buy from a supplier that gives the harvest year and the alpha acid on the packet. Our guide on hop storage and freshness explains why that matters.

Why late and cold works best

The sweet fruit in El Dorado sits in volatile oils. Boiling drives many of them off in minutes. A long boil addition therefore gives bitterness and little of the candy note. The aroma survives best in a hot whirlpool below about 80 °C and in the dry hop.

Because the alpha acid is high, a whirlpool charge adds bitterness too. A 40 g whirlpool addition in 20 litres can add roughly 10 to 15 IBU on its own, depending on how long the wort stays hot. Bitter with a small clean addition at 60 minutes or not at all. Count the whirlpool in your total.

A hazy pale ale for 20 litres

Aim for about OG 1.045, FG 1.012 and 4.3% ABV (using ABV = (OG - FG) x 131.25). Grist for 20 litres, 4.0 kg in all:

  • Pale ale malt 2.8 kg (70%).
  • Flaked oats 0.6 kg (15%).
  • Wheat malt 0.6 kg (15%).

Mash at 66 to 67 °C for 60 minutes. Boil for 60 minutes with a small bittering charge. Whirlpool 40 g El Dorado at 75 to 80 °C for 20 minutes. Ferment with a hazy-friendly ale yeast at 19 to 20 °C. Dry hop with 60 g (3 g per litre): half during the active stage of fermentation and half once fermentation has slowed. Keep contact to about three days each.

Water and the haze

Hazy beers like a soft, round mouthfeel. Aim for chloride a little higher than sulphate, for example a chloride to sulphate ratio near 2 to 1, with low overall mineral content. Our guide on Calypso hops covers a gentler pear-led hop if El Dorado is too sweet for your taste.

Protein and polyphenol haze is fragile. A hazy pale ale loses its look and its aroma quickly if it picks up oxygen. Purge the fermenter with carbon dioxide before dry hopping and transfer without splashing.

Dry hopping without the oxygen

This is the floor detail that matters most. Oxygen enters through the dry hop port every time you open it. Add the hops through a small opening, flush with carbon dioxide and close within a minute. Pressure-transfer into a purged keg if you can. A hazy beer that browns and tastes of cardboard after two weeks has usually been oxidised at dry hopping or transfer. Our guide on dry hopping covers contact time and temperature.

Mistakes that dull it

  • Long boil additions that drive off the oils.
  • Dry hopping for a week or more, which drifts towards grass.
  • Pairing it with a heavily caramelised malt bill that buries the fruit.
  • Using old hops that smell of cheese or hay.
  • Serving the beer warm and flat, which hides aroma.

Yeast matters as well. Some hazy-friendly strains add peach and apricot esters of their own. Those can stack well with El Dorado or turn the beer into a fruit salad. Brew the beer once with a cleaner strain and once with an expressive one, then pick the balance you want. Smell a few pellets rubbed between your fingers before each brew too. That ten second check tells you whether the packet still carries the sweet fruit or has gone flat.

El Dorado in India

El Dorado reaches Indian brewers as pellets, mostly through importers and homebrew suppliers. A packet that spent a week in a hot courier van will have lost aroma before you open it. Ask how it was shipped and stored. Keep it in the freezer, sealed. Weigh out only what you need. The cold chain for the finished beer matters just as much: hazy pale ales taste best fresh, so keep kegs and bottles cold.

Stock is irregular. If you cannot find El Dorado, Jester or Pacifica give a different fruit but suit the same recipe.

Common questions

What does El Dorado taste like?

Pineapple, pear, stone fruit and watermelon, with a sweet candy note. The balance varies by crop year and how it is used.

When should I add El Dorado hops?

Late: in a whirlpool below about 80 °C and in the dry hop. Long boil additions lose most of the aroma.

Can El Dorado be used for bittering?

Yes, because the alpha acid is high, usually 14 to 16%. Most brewers prefer to save it for aroma.

How long should I dry hop with El Dorado?

About three days at fermentation or cool temperatures for each addition. Longer contact tends to add a grassy edge.
