Beer with fruit platters and summer mangoes
Indian summer means mangoes, watermelon, jackfruit and lychee. A fruit platter is a simple, light way to end a meal. The right beer makes it better. Here is how to match fruit with hops, yeast and acidity.
Fruit flavours are already in some beers
Many beers taste of fruit without containing any. Hops such as Citra, Mosaic and Galaxy carry aroma compounds that read as mango, passion fruit, pineapple and citrus. Ale yeast produces esters: isoamyl acetate tastes of banana, ethyl hexanoate of green apple and pineapple.
That gives us an easy pairing tool. Put a mango next to a beer that already smells of mango and each makes the other seem riper. Put a banana next to a hefeweizen and the banana ester in the beer jumps out. This is the 'complement' approach. With fruit it is usually the strongest one.
Alphonso, Banganapalli and the mango season
The mango season in most of India runs from about April to July. Alphonso from Ratnagiri and Devgad is rich, floral and very sweet. Banganapalli is milder and less fibrous. Dasheri and Langra from the north are sweet with a spicy, resinous edge.
For sweet, floral Alphonso, a hazy pale ale or New England IPA with low bitterness is the match: tropical hop aroma, soft body and not too much bite. For Langra's tangier, more resinous flesh, a West Coast pale ale with a little more bitterness holds up. A mango wheat beer is the obvious choice, but check it tastes of fruit and not candy. Our guide to telling real fruit from flavouring explains how.
Remember the sweetness rule. A very ripe Alphonso can make a dry, bitter beer taste harsh. Keep IBUs low, under about 35.
Melons, grapes and the light fruits
Watermelon, muskmelon and grapes are mostly water and sugar, with delicate aroma. Heavy beers bury them.
- Watermelon with mint or chaat masala: a gose or Berliner Weisse. The light acidity and salt in a gose mirror chaat masala on fruit.
- Muskmelon: a Kölsch or a light Belgian blonde with gentle fruity esters.
- Grapes: a witbier or a light saison.
These beers sit around 3 to 5% ABV and are refreshing in the heat, which is exactly what a summer fruit plate is for.
Jackfruit, lychee and the big tropical flavours
Ripe jackfruit is intense, sweet and slightly banana-like. A German hefeweizen echoes its banana note and has enough body to keep up. Lychee is floral and perfumed: a Belgian blonde or a hazy IPA with floral hops suits it. Pineapple, with its sharp acidity, goes well with a witbier or a lightly tart fruit sour.
Sour fruit beers can be magic with tropical fruit. A passion fruit or guava sour, if a local brewery makes one, picks up both sweetness and tartness on a platter.
Chaat masala, salt and chilli on fruit
In India a fruit platter is often seasoned: chaat masala on guava, salt and chilli on raw mango, black salt on watermelon. That changes the beer.
Salt softens bitterness and lifts sweetness, so a seasoned platter can take a slightly hoppier pale ale. Chilli heat grows with alcohol and bitterness, so with chilli-dusted fruit keep the beer light: a gose, a witbier or a cold lager. Raw mango with salt and chilli is mostly sour and spicy, so treat it as you would a tangy chaat and pick a tart, low alcohol beer.
Keep fruit and beer cold in the heat
Cut fruit and pale beer both suffer at 35 °C. Fruit browns and loses aroma within an hour. Beer warms quickly in the glass and hop aroma fades. Our guide on tasting beer in Indian summer heat has more on this.
Chill the fruit for an hour before serving and set the platter over ice. Serve hazy pale ales at 6 to 8 °C, light wheat beers and goses at 4 to 6 °C. Pour 200 ml at a time so the beer stays cold. Hoppy beers fade quickly after packaging too, so buy recent stock and keep it refrigerated: a hazy IPA that has sat warm in a shop for months loses the very mango aroma you wanted.
Build a fruit and beer board
A fruit and beer board is an easy, low alcohol way to host friends in summer. Choose three fruits and three beers: say Alphonso, watermelon and pineapple with a hazy pale ale, a gose and a witbier. Use small 100 to 150 ml pours and plenty of water.
Your first step: set up that board and let everyone vote on the best match for each fruit. You will find the beer that shares an aroma with the fruit wins more often than not.
Common questions
What beer goes with mangoes?
A hazy pale ale or New England IPA with low bitterness. Tropical hops such as Citra and Mosaic carry mango-like aromas that match ripe Alphonso.
What beer goes with watermelon?
A light, tart beer such as a gose or Berliner Weisse, especially if the watermelon has chaat masala or black salt.
Why does beer taste fruity without fruit?
Hops and yeast produce aroma compounds that read as mango, citrus, banana or pineapple, even though no fruit is added.
When is mango season in India?
Roughly April to July, depending on the region and variety.
